Coco Jack

So I feel like a bad wife…Dan and I talked before Valentine’s day and we decided not to get each other presents this year because of our trip to India (in 4 days!). Totally cool with that. So Valentine’s day comes around and Dan says, “Oh, I got you a present.” Nice D, now I feel like a jerk. “Oh yeah me too…I got you a card that proclaims my undying love for you.” 😉

He’s so sneaky and wonderful.

Any who… he got me this WAY COOL coconut opener called The Coco Jack! I love me some coconuts, but they’re the biggest pain in the a$$ to open so this little invention is a life saver (literally, you can hack your fingers off using that old machete). All you do is place the sharp cylinder on top of the coconut and give it a good smack with a rubber mallet. Then pull up on the handle and pop out the top of the coconut. Simple as that. Here is a video clip if my description has still got you scratching your head. It’s super cool. Go get one!

Here’s the recipe for the yummy smoothie bowl I made:
1 packet sambazon açaí
1 frozen banana
coconut meat from one coconut
1/2 cup coconut water
1/4 cup ginger soother
Blend and top with blueberries, raspberries, apples and chocolate covered cacao nibs.

Matcha Green Tea Smoothie Bowl

Matcha green tea banana nice cream swirl with strawberries, cacao nibs, buckinis and passion fruit! Matcha hemp mylk latte on the side! It’s going to be a great day!

Nice Cream Base:
2 frozen bananas
1/2 cup vanilla hemp mylk
*Blend in a blender until smooth. Pour into bowl.

Matcha Base:
1 frozen banana
1 tbsp pure matcha powder
1/2 cup vanilla hemp mylk
*Blend in a blender until smooth. Pour on top of nice cream base. Swirl with spoon.
Top with strawberries, cacao nibs, buckinis and passion fruit

Oh My Stars Bowl

Oh my stars! Pitaya n banana nice cream, star fruit, passion fruit, banana coins, cherries, blueberries, buckinis, cacao nibs, coconut and a blackstrap molasses drizzle.

Smoothie Base:
1 Frozen pitaya plus packet
3 frozen bananas
1/2 cup fresh orange juice
*Blend in a blender until smooth

Top with star fruit, passion fruit, banana coins, cherries, blueberries, buckinis, cacao nibs, coconut and a blackstrap molasses drizzle.

Pineapple Smoothie Bowl

Dessert before dinner… pineapple bowl with figs, peaches and coconut bliss nice cream. Topped with coconut yogurt, berries, cacao nibs, plums, Asian pear, mangosteen, passion fruit and shredded coconut! A flavor explosion!

Nice Cream
1/2 pineapple (cut into chunks)
3 frozen figs
1 peach (cut into slices)
2 scoops of coconut bliss ice cream
*Blend in a blender until smooth. Scoop into hollowed out pineapple. Top with coconut yogurt, berries, cacao nibs, plums, Asian pear, mangosteen, passion fruit and shredded coconut!

Sunshine in a Jar

Sunshine in a jar right here! ☀️Nectarine, mango and banana nice cream with sliced strawberries and a layer of chewy caramelly rawnola (diced pecans, dates, dried coconut and cranberries) and passion fruit. Perfection!

Nice Cream
1 nectarine
1 mango
2 frozen bananas
*Blend in a blender until smooth

Layer with sliced strawberries, chewy rawnola and passion fruit pulp
