Vanilla Spice Chia & Berry Parfaits

Cinnamon Berries and Chia Parfaits | A Bit of Bees Knees
Breakfast to go! Vanilla spice chia n berry parfaits with almonds, raspberries and crumbled Madagascar Vanilla Almond & Honey “This Bar Saves Lives” on top.

-Cinnamon Berries-
5 strawberries
5 blackberries
10 raspberries
*smash and mix with 1 tsp cinnamon.

-Vanilla Spice Chia Seeds-
1 cup almond milk
3 tbsp chia seeds
1 tbsp Raw Green Organics vanilla protein
1/2 tsp cinnamon
1/4 tsp nutmeg
*mix ingredients together in a cup and let sit until the chia seeds absorb the liquid.
Layer with spiced berries and top with almonds, raspberries and crumbled @thisbar.

Chia passion parfait! Lots of fun flavors in this one! Layers of vanilla bean chia seeds, kiwi, mango banana cream, blended black cherries, strawberries, blueberries and passion fruit pulp with roasted coconut chips on top!

Vanilla Bean Chia Seed Pudding
2 tbsp. chia seeds
1 1/2 cups hemp mylk
1 tsp. vanilla bean paste
1 tsp. agave
*combine in a cup and let sit in the fridge for 1 hour. Stir occasionally to make sure it doesn’t clump up.

Mango Banana Cream
1 rige mango
1 frozen banana
*blend in a blender until smooth

Cherry + Berries Smoothie
1/2 cup fresh black cherries (pitted)
5 frozen strawberries
1/2 cup fresh blueberries
*blend in a blender until smooth

Line a dry glass cup with thin kiwi slices. Layer with vanilla chia pudding, mango banana cream, cherry + berry smoothie and passionfruit pulp. Top with half a passion fruit and roasted coconut chips.

Peanut Butter & Jelly Bowl

Mmmm my breakfast game was on point this morning… overnight vanilla hemp mylk steel cut oats topped with cinnamon chia seed pudding, fresh strawberry “jam” and peanut butter swirls with black and blueberries. Husband approved…”the best pb & j bowl ever!”

Overnight Oats
2 cups rolled oats
2 cups pacific foods vanilla hemp mylk
1 tsp maple syrup (or agave)
*Combine in a bowl and let sit in the fridge overnight

Cinnamon Chia Seeds
2 tbsp. chia seeds
1 cup mylk of your choice
1 tsp cinnamon
1 tsp. agave
*Combine in a cup. Stir and let sit in the fridge overnight

Strawberry “Jam”
5 strawberries
1 tsp. agave
*Blend in a blender until smooth

PB Swirls
1 tbsp. peanut butter
1/2 tsp. coconut oil
*Heat in a small cup. Stir until smooth.

Dessert for breakfast!? OK this is fabulous anytime of the day…
Hemp mylk chia pudding, passion fruit, blended frozen strawberries, coconut yogurt and blackberries on top! So good.

Botton layer:
Chia seeds mixed with vanilla hemp mylk (make the night before or wait 20 minutes for the seeds to soak up the mylk)

Second layer:
a scoop of passion fruit seeds

Third layer:
Frozen strawberries that have been blended with orange juice

Fourth layer:
vanilla coconut yogurt

Healthy Smoothie Jar

Healthy Smoothie Jar
I posted this baby on instagram the other day so I thought I’d let you know how to make it. Super simple…
Ingredients
1 kiwi
1 cup frozen mixed berries {I get the bag from Trader Joe’s}
5 fresh strawberries
2 tbsp. chia seeds
1/2 tsp. vanilla extract
3 drops of liquid stevia
1 mango {cut into cubes and frozen}
1 tbsp. fresh lemon juice
water
Directions
-Peel and cut kiwi into thin slices. Stick the slices on the inside wall of a dry glass jar.
-Blend the frozen mixed berries with 5 fresh strawberries. Add a few tbsp’s of water if the texture is too thick. Pour or spoon the blended berries into the glass jar.
-Mix chia seeds with vanilla and 1/2 cup of water. Add 3 drops of liquid stevia. Let the chia seeds absorb the water and then add to the jar {this can be made ahead of time if you don’t want to wait}. Be careful not to mix the layers.
-Washout the leftover blended berries from the blender and then add frozen mango chunks and lemon juice. Blend. Use water if needed to reach your desired consistency. Add to the jar.
-Top with cocoa nibs and fruit.
It was really fun to make + a great way to get your daily servings of fruit 🙂
