Colorful Organic Carrots With a Ginger Tangerine Dressing

Shaved colorful organic carrots with mint, green onions, pecans and a ginger tangerine dressing. I love the red carrots with yellow centers! So purdy! Shave the carrots into long ribbons with a veggie peeler.

Ginger Tangerine Dressing:
1/4 cup (60 ml) white wine vinegar
2 tangerines (juiced)
1 lemon (juiced)
1 scallion (chopped)
1 tsp. whole grain mustard
1/2-inch x 1/2 inch piece fresh ginger root (minced)
1/2 tsp. salt
1/4 cup olive oil
1/4 cup grape seed oil
1/2 tsp. sesame oil
1 tbsp. agave

Shake it up 😉
Top with shredded mint and pecan pieces.
