Operation Healthy Summer continues! Raw Key Lime Tart with Raspberry Chia Seed Sauce for dessert!
Crust:
1/2 cup almonds
1/4 cup sunflower seeds
5 soft pitted dates
1 tsp. coconut oil
*Blend in a food processor until fine.
Filling:
1 cup of raw cashews (soaked in water for 2 hours)
juice from 3 limes (or 6 key limes)
2 tbsp. honey
*Blend until smooth, add water 1 tsp. at a time until the filling becomes silky (like batter).
Raspberry Chia Sauce:
10 raspberries
1tsp. chia seeds
*Blend in processor. Freeze raw tart for 1 hour.
