Lunch for two… Raw zucchini noodles with garlicky basil avocado cream, cherry tomatoes and mixed greens sprinkled with sea salt, red pepper flakes and a squeeze of lime + a cup of cold watermelon juice on the side.
*Use a spiralizer to make zucchini noodles. I used about 4 zucchini.
Garlicky Basil Avocado Cream
1/2 clove of garlic
1 handful fresh basil
1/4 cup water
squeeze of lime
salt to taste
*Blend all ingredients in a blender and pour on top of zucchini noodles. mix the sauce into the “noodles” so they are evenly coated.
Top with cherry tomatoes, mixed greens and red pepper flakes.
